Making Popeye Jealous



Spinach is one of my favorite ingredients. I love that it can be given a drizzle of vinaigrette and the result is a tasty salad. It can also be wilted down into a smidgen of oil with a little chopped garlic and makes a phenomenal side dish. So, when I stumbled upon a recipe for baked spinach crisps, I was immediately intrigued. The process couldn't be simpler and the crisps are light as a feather and a great alternative to fatty and oily snacks. For those of you hoping to sport swimsuits in a month or so, this little nibble is for you.


Lay spinach flat on a cookie sheet lined with parchment. Sprinkle with kosher salt and freshly cracker pepper.



Bake at 350 F for 7 minutes.
 

Enjoy immediately.

    I love spinach in any form and these chips are looking so fresh, vibrant and inviting...need to bake my batch soon !
